sushi bake and crispy rice:

Last night was sushi night in our house! Instead of making traditional sushi, I tried two new recipes that turned out delicious and a new favorite homemade meal. See the recipes below.

Sushi Bake Ingredients

Nori seaweed

Cooked white rice

Shrimp

Sauce for shrimp: salt, mayo, cream cheese, soy sauce, spicy mayo, sriracha

Instructions

Bake in a preheated 400 F oven for about 15 minutes. I like to put it on broil for the last 60 seconds to get the top crispy

  • Cut the nori seaweed into squares

  • Put a little cooked rice in the middle of the square

  • Place into a muffin tin

  • Cut the shrimp into little pieces and mix the sauce in a separate bowl. Then pour it over the shrimp and mix well

  • Scoop the shrimp into the muffin cups and bake

  • Once baked, enjoy with extra spicy mayo and add toppings of your choice like avocado or cucumber

    Crispy Rice Ingredients

    White rice

    sushi salmon

    cucumber

    avocado

    Instructions

    Heat up a waffle maker and place the white rice into it. While it is turning crispy, cut up the cucumber, avocado, and salmon into small cube-sized pieces. Watch the rice closely to see when it looks crispy enough for your liking and so it sticks together. When finished take it out with a fork and layer the salmon, then cucumber, and avocado. Drizzle with spicy mayo and soy sauce. Enjoy!
